Hey Scott, Everthing you wrote is correct except for this:

   Non-specific Star Wars characters (i.e. rebel snow soldier in snowspeeder set) is yellow.

If you look at the Snowspeeder set you will also see that Luke and Dack are yellow. Thats because the Snowspeeder was in the last wave of sets to have yellow minifigs - along with the Dagobah X-wing and Mos Eisley Cantina. All minifigs in new Star Wars sets (i.e. Millennium Falcon) will have the flesh tones.
