Each joint is controlled and held in place by use of worm gears.
The Mecha can hold its shape and pose due to these components.
Coupled together with other elements like, Gearboxes and Turntables.
So adjacent to each joint is a control knob to adjust the limbs.

What this means is, there are combinations of techniques that are employed to
keep the limbs in place. Using high torque ratios in gearing is one way.
I use z40-to-z8 gearing combos. Binding the technic beam directly to the z40
by use of half-axle technic pins. This puts the weight on the gear not the
axle. This alliveates (gosh I cant spell) the axle twist and further reduces
the backlash Mecha suffer from when using geared systems.
Meaning, making a Mecha from all technic pins, ball joints, gears, pnuematics
worm gears etc...

So I guess the question and decision I am left with is: Do I create my own
joints from scratch or do I ask for examples and start from where others have
left off? What would you recommend?

I would say, first thing to do is check what parts you have. Look around to see
what creations are around and see if you can build them.
For example, see if you have some click hinges. Then check around and see what
Mechs use them and see if you can build one using that technique.
