Yeah, and ideally submodels should be centered on their axis of rotation.

Heh... would be nice, but that's one of the little features I haven't been
able to figure out yet in my pea-sized brain :)  I'm sure not everyone else
has either.  Could that be one of the model editors' things to do??

No, that would take too much time to fix all the submodels.

The center of a submodel is just the 0,0,0 point of the submodel file.  Like Bram mentioned, putting a light.dat  at 0,0,0 will show
you where the center is.  Then you move whatever part does the rotating, i.e. hinge, turntable top, etc, so that the light.dat is at
the axis of rotation for that part.  If it's a turntable, the light.dat just goes in the center of the turntable (looking from the
top).  If it's a click-hinge, then it goes in the center of the circular indentions (looking from the side).  Then you build the
rest of your submodel around that hinge piece.

The value of this is that when you are modifying the model file (say to open the X-wing wings), you just have to select the wing
subfile, set the center of rotation, and rotate.  Or you can use the Rotate meta-command if you're using LDLite.
