I dunno. Sure, some of us .starwars people would buy a dozen buckets, and
sure, the Horde of Starwars Collectors would each buy one, but is that
enough to justify production? We're still a pretty small part of the
market...

But to answer the original question:

T-16 Skyhopper
Sandcrawler, or perhaps just
Jawas and Droids
Bespin Cloud Car
Rebel Transport
TIE Interceptor
TIE Bomber

And that's just stuff that moves. If the implication with Watto's Junkyard
is that Lego doesn't have anything against "base" type Star Wars sets,
then, given Lego's predilection toward action-oriented stuff on bases:

Death Star Escape: A catwalk at the top with a lever to flip that trips
a spring to throw the tractorbeam off the station, a slide from the
prison level down to a brick-filled garbage compactor with real moving
wall...

Bespin: Han Solo is lowered into the carbon freezing pit, a knob is turned
and a LOM mech-hand reaches in to grab the carbon-frozen-Han brick. A
spring-loaded arm throws boxes at Luke.

Hoth: A turret rotates, more springs drop white tiles on R2's head when he
rolls through a corridor. Han and Chewie go blow up the droid.

Yoda's Cave: Complete with hinged tree for Luke to enter.

Naboo Palace: Structurally similar to Bat Lord's Castle, it will include
a winch to pull people up to the top level and spring-loaded destroyer-droid
rollerators.

Mos Eisley: You will never find a more wretched hive of SPUD and villainy.
