Yay, more OCD (obsessive/compulsive) LEGO fans like me! My girlfriend finds
it slightly amusing/slightly disturbing that I tend to build all my SW LEGO
sets with the "LEGO" text facing in certain ways not dissimilar to yours.
Basically, I tend to make the "LEGO"s in readable orientation from the
cockpit of the ship (exception: when I can't, like you've gone into, and
sometimes when it looks better to keep it lined up from front to back), so
towards the front, they're meant to be read from behind, on the left they're
meant to be read from the right and vice versa.
The only times I don't do this are: when I don't feel like it (very rare),
or when I'm building a set with my gf's help (usually a UCS SW set like the
X-Wing or the ISD soon, I expect), and I know she won't be doing it, so I
give her the parts which I don't care about the alignment of as much.
Even I admit it starts to get to be a bit too much when I try to align the
1x1 round plates the same direction, so I let her do that part of the X-Wing
at the back (4 of them per wing for a total of 16).

I'm not sure I'll be able to take that long, but I know what you mean about
it almost doubling the time. For me, it's more like an extra 50% than 100%
though.
