This isnt the kind of answer for which you were seeking, but for me it was
the advent of Brickbay (now Bricklink). That has done more to allow me to
build whatever I wish then any particular LEGO set. I would also say that
Pick-a-Brick has also been a fabulous help as well.

Id have to agree in part with John. Having PAB has been a big help (Along with
the Great Wall of Bricks at the LEGO stores). Bricklink has also been a help
with filling in missing parts, etc.
But the biggest things to help kick my building up another notch have been
things like AFOL conventions, LEGOland, and the internet--I belong to several
AFOL groups: LUGnet (obviously), Brickshelf, and Classic-Space have all been
great idea areas for me.
Finally, for me its not just building just a set--but assembling all my sets to
form cities, villages, starbases, etc. Just seeing how things work together
allows me to get creative with the limited space I have to build in.
This is also probably not quite the answer you were seeking...however, for me
its been more of the growth than just one aha set or moment.
