That's true - I hadn't appreciated the level these people were at.
In that case may I strongly recommend a classic: "The Art of Lego Design"
by Fred Martin.
You can find it in several places:
http://fredm.www.media.mit.edu/people/fredm/papers/artoflego/cliche.html
...you could perhaps get these people to read it before your first class
because it covers a lot of that early stuff in a condensed, concise way.
Some of the items are a little outdated for recent Mindstorms parts.
