I'd either go in one of two directions:
1. The "studs on both sides" plates that some of commented about. (This year
brings us one of my long time wishes - 1x2 and 1x1 bricks with studs on two
sides and top)
2. Odd length plates (and bricks, but plates are best). 1x5, 1x7, 1x9 plates.
Especially the 1x5... I always seem to end up needing those.
