Here's how I did it for Kobayashi's troop barracks in my Isle of Mist story:

You can see here that the side walls are simply black sloped peaks, without
any studs.

Here you can see that each half of the roof is tied together with a couple
of car roof hinges (the green items) while all the yellow and blue plates
simply tie the tan plates together, and space the hinges off the plates a
bit so the joint at the roof peak looks good.
The roof simply sits on top of the building, and isn't actually attached to
it in any way. It works fine for Lego, but if a hurricane blows through,
those roofs are gone :)
