there are a few ways to do it.
There is a brick made for doing it http://www.peeron.com/inv/parts/6044
which has come with a few sets, but not enough to be useful. I tend to use a
1x2 hinge brick. http://www.peeron.com/inv/parts/3938 +
http://www.peeron.com/inv/parts/3937 like here
http://www.minifig.co.uk/models/dockside.htm these have the added bonust
that they allow some degree of access to the inside of the building by
tilting the roof, also they don't resrict you to the pitch of the roof at
all
