You apparently cannot select colors 256-511 using the mouse.
You'll have to type in the number. The number is initially shown in hexadecimal
notation, but you can enter it in both decimal (256) and hexadecimal (0x100).

Yes, I also recommend "0 TEXTURE xxx".
This works for *any* color, see http://home16.inet.tele.dk/hassing/l3p.html#extcol
And it works for slopes, where a section of the part definition has the
slope texture, but you don't know the color yet (only color 16).
MLCad should be able to automatically insert a "0 TEXTURE RUBBER" line above
and a "0 TEXTURE END" line after the line you change color/texture for.
