There was a fascinating programme on the telly recently with various ex
stewards and stewardesses telling stories of their days in the air, and it
was full of stories along those lines. You really don't want to be rude to
these people, lest you end up with the "blue tea bag", for example. It was
also said that turbulance can also be suddenly encountered by having a word
with the pilot; this is apparently deployed when particularly rude customers
visit the toilet.

Oddly enough, not long after watching this program I was on a flight which
had an entire family of spoilt screaming children, who were really far too
old far that type of behaviour, and we did indeed encounter severe
turbulance, and they did indeed become suddenly very quiet. Coincidence?
