Gray actually goes back to the 1950's.  I have a 10x20 thick baseplate in gray
without "Lego" on the studs (pre 1957).  The 10x20 baseplates first came out in
1953, but I cannot confirm that they started in gray that year.  The next
appearance of gray came with the advent of the Architectural Sets (1963-65),
when gray plates came out in 1x1, 1x2, 2x2, 2x3, 2x4 and the strange 8x11 plate
that was the top (actually bottom) of the plastic boxes that held these pieces.
The earliest of these were CA, then switched to ABS.  Then in 1966 the #325
Shell Station came out with more different size of large plates.  But regular
bricks didn't come out until after 1978.  One of the first was the 1x1 round
bricks, found in the USS Constellation of 1978.

Gary, perhaps you could identify something for me?  I have a number of gray
10x10 thick baseplates that appear to be the tops of boxes.  I rescued them from
a friend who was disposing of his Lego collection (!), but the boxes were
already lost..

Black first showed up in late 1961/early 1962

I was under the impression that black dated to 1957, e.g.

Hello Brian,

I answered the question on the black parts in a different post in this color
thread, 1962 is correct as the begin date for black.

Those 10x10 thick baseplates you have are a USA/Canada Samsonite item.  They
were never released in Europe.  The only picture I can find is for set #703, but
that (and #702) have red box tops made out of these 10x10 baseplates.  USA
Samsonite made a few other sets in this same general shape with the top as a
10x10 baseplate in colors other than red.  They were #704 Doll set (set not in
database) and #021 Wheel set (picture not in database).  I have these 10x10
baseplates in my collection in the following colors (red, black, gray, yellow).
There are a few others as well, but they are also not in the database.

Good to hear from you Brian!
