I would asume that the desingers at lego have been working unofficaly if not
officaly on starwars style desings.  The probably just found the new ep1 as
the perfect opertunity to culminate them and ride the hype like every one
else.  Obviously they wouldnt have had as much time with the ep1 designs.

Could be due to the fact that they had more to go on for the classic stuff...
All that stuff has been well documented for years... Also, if they had the
contract to design SW sets long before Episode I came out, the Episode I stuff
might have not even been in its final design phase. That might mean they had
less time to design the Episode I stuff as opposed to the original stuff, • since
Lucas himself wasn't sure of what the Episode I stuff would look like when the
contract was made....
Anyway, just some thoughts...
