part of the challenge having the robot decide when it had reached the beacon?

Depending on the number of sensors used, there will be no more sensors
inputs to add a "beacon detector". My first idea was to use some kind of
rotating sensor to detect where the beacon is, and to decide when we are
near enough. But well, if no more sensors inputs are available, a
different color square could be a good step before adding a real light
seeking mode...

A variation that might be fun is to have one or two bricks by the beacon to be
retrieved and brought back for extra points.  Perhaps one 'bad' (negative
points) brick and one 'good' (positive points) brick.

Good idea, this sounds just like having a bad guy(=brick) and a good guy
in the maze. You should avoid the bad guy, and try to rescue the good
guy...

Whoops, it looks very hard to do...
