Robotech would have to be the first.  Later to become Macross, et al.
Gundam does have some appeal, but just because there is so much detail.  30
story high mecha just don't really do it for me.  Starblazer, Voltron, and
G-force had their own influence, although significantly less.
Battletech, and other mecha related RPG's have to be listed up there also.
More recently (read "last five years"), it's been Appleseed, Patlabor, and
Votoms.  Hobby Japan Extra's summer garage kit issues have been past fav's
of mine.
Surprisingly, a lot of my inspiration has lately come from looking at the
pics at Hobby Link Japan:
http://www.hlj.com I haven't seen most of those anime, but they have some
killer mechs.
Video games are also influential.  Front Mission 2/3 are great for mech
design.
Hmm...oh, yes.  For functionality, and wealth of realism and detail, I like
S.F.3.D.
