For me this depends on if I am building a bunch of buildings, or just one.
If I'm building a town, I often leave the backs open, simply so that I have
more lego left over to build more buildings. If I am just building a few
structures or one big complicated one, I build the whole thing, so that it
can be viewed and photographed from all sides.

Sometimes I do, but usually I don't. Generally I like to build buildings
that are looked at from the outside, so the interior does not matter. But
I'm just a beginner at this town thing, there are some vetrans out there
that build incredible stuff with interiors!!

I know what you mean! It takes a lot more slopes than you would expect make
a roof, and I often run out too. Which leads to many flat roofs! As for
windows I am stocked, but that's because I buy a lot of bulk sets with
windows. If you build with the modern 5 brick high doors etc. look for set
#4267 There are only a few left where I am but you might have better luck.
It is a blue system bucket with "special pieces" marked on the side. It is
very reasonable in price and contains a good proportion of doors and windows
for a set of it's type (or just buy a window set and roof piece set from
S@H)
