depends on what i am building...

if it is a one story or sometimes two story, it will get a full back and
a flat or "stepped" roof.
if i am building a multi story building, the back will be open.  also,
the first floor will almost always be extra tall, like an atreium, to
conserve bricks.    also, in a taler building, again to save slopes and
bricks, i try to "stack" the top 2-4 floors, each higher floor having a
smaller foot print.

2)  When building a multi-floor struture do you have actual "floors" for
each level?

i do use floors for each story as i put things on the floor (i build to
minifig scale).
