I build with 4 walls (sometimes more - octagonal, etc.) Either the walls are
hinged (1x4 - 2x2 hinges) or technic pegged so that the entire structure is
modular (see my castle, downtown and cathedral)

I put in floors. One of the neat tricks I've learned over the years to add
large floors: build the structure 2 bricks wider than a baseplate. Build the
exterior walls with 2x bricks. Then to insert floors:
1. put a single layer of 1x bricks on the outside edge of the exterior wall
2. put a single layer of 1x plates on the inside edge of the exterior wall
3. put a single layer of 1x plates on the outside enge of the base plate you
want to use as floors
4. put the baseplate on top of the inside layer of plates
5. add a layer of 2x bricks on top and the whole thing locks into place with
little or no interior support necessary
The baseplate floor procedure outlined above also works great for flat roofs.
I usually add a layer or two of bricks topped by tiles along the outside edge
to give the "low wall" effect.
