We've never seen them anywhere but in ROTJ, but they also included one
with the AT-TE based on the fact that there was an EP2 concept drawing
showing one being ridden by a Clonetrooper (which I guess makes that the
first official SW:EU LEGO model). There are semi-official schematics
showing that the AT-AT cargo bay can hold either a folded-up AT-ST or 2-3
speederbikes, and the Galoob X-Ray AT-AT includes internal detailing shaped
like speederbikes based on that schematic. It's not without precedent, even
if it has nothing to do with official movie-canon.

They didn't. At least not that I know of (they certainly didn't have
one at Toy Fair). You get Luke Pilot but that should be it.
