Chris,
  Differentials are used to distribute rotataion velocity between two
axels.  The differential is driven by a constant rotational velocity
source and this velocity is distributed between the two axels in such a
way that their average velocity is equal to the driving velocity.

The most common use used to be in rear wheel drive cars where the drive
shaft provided power to the differential and the differential split power
to the two rear wheels.  When the car turns the wheel on the outside of
the turn needs to move faster than the wheel on the inside of the turn,
so the differential steals velocity from the inside wheel and
redistributes it to the outside wheel, creating a difference in
velocities, hence the term differential.  Of course this neglects all of
the problems of positive traction control, but you get the idea.
