what exactly is the purpose of a differential gear?  i've got several of
them, i've seen them used in various projects, but i've never quite
managed to figure out what they do.

Chris, Differentials are used to distribute rotataion velocity between two axels. The differential is driven by a constant rotational velocity source and this velocity is distributed between the two axels in such a way that their average velocity is (...) Take a look at this (URL) only will you find some good stuff here about differentials, but transmission, steering, and suspension systems.
