Well, I think there are 11 "castle"s you might mean:
6075 Castle (classic yellow castle)
6080 King's Castle
6073 Knight's Castle
6074 Black Falcon's Fortress
6085 Black Monarch's Castle
6081 King's Mountain Fortress
6086 Black Knight's Castle
6082 Fire Breathing Fortress
6090 Royal Knight's Castle
6097 Night Lord's Castle
6098/1 King Leo's Castle
Picking a favorite is tough-- there's a lot of different things to look for in
a castle set. My favorite sentimentally is King's Castle (my first real
castle). But I also like it for the amount of pieces, the lack of a baseplate,
the quantity of 'figs, and the design of the set. I'm also really fond of 6086
because its model is probably the best (IMHO) and it's got a great selection of
pieces. Those'd probably be the two front runners, with 6090, 6081, 6073, and
6074 following close behind.

Well, there's a lot of things I think people like about it...
A. There's lots of figs. More than any other castle set ever. And what's more,
the logos used on them and their shields are probably some of the most
realistic TLC has ever derived.
B. There's lots of basic pieces (highest brick count of all castles, and NO
prefabs!). As a builder with this set, the possibilities soar. You can
arguably create more castles out of this 1 set than any other castle set out
there. Even the horses are made from pieces! (I know there are some out
there who don't like the pre-fab horses)
C. It's rare. It was, after all the 1st castle set ever. Also, thanks to many
people remembering it as they grew up as 'the' castle, it's got a lot of
sentimental value.

I just have to say here that I can't stand 6082. Doubtlessly my least favorite
castle, followed close on the heels by 6098/1.

Of course, piece selection is kind of a dubious catagory. Having loads of basic
bricks is often better than having a variety of unusable pieces. And as far as
I'm concerned, I don't pay much attention to playbility at all... Anyway,
that's about how I'd rank things though :)
