And what are those pieces holding the new canopies in place?  Looks like
there are at least two different holder-bricks: a 1x1 with a top
connector for the X-wing and Y-wing, and then a 1x2 with a side
connector for the Snow Speeder.

That is odd.
It looks to me that the canopy has two clips similar to the  clips on
a "6019.dat Plate  1 x  1 with Clip Horizontal" piece that extend
rearward.
Those new pieces you mentioned look like they might have a " T " bar
arrangement to snap into the canopy clips.

Alternately, the canopy clips could have a short connecting bar
between them, and the new pieces could be simple clips that snap onto
the canopy bars.  But it would be more difficult to manufacture clips
with integral bars.
Much simpler to make the "T" bar arrangement.

Whatever it is, it looks interesting.  The downside of my hypothesis
is that the canopy will have these ungainly projections from the rear.
Which could pose problems when designing MOC's.

Assuming they are the same pieces (no reason for them not to be) that are in
the '99 Adventurer's sets, then they are 1x2 bricks with a horizontal side rod,
as previously seen only on 1x2 plates.  There is a similar 1x2 brick with a
verticle clip.

At the time I was writing that, I had that nagging feeling I was
forgetting something.  I forgot all about the 1x2 with vertical clip.
The new piece you describe, with horizontal rod, sounds exactly like
what it is.
Although there still may be another piece, a plate or tile with the
clip/rod in a  T shape on top.
