Well, yeah--thats the mundane explanation. But whats the in-story
explanation?

The theory I have seen most often is that evenly matched highly powerful force
users will actually be limiting one anothers movement making such fanciful
moves useless or dangerous. Consider in episode 3 when Obi-wan and Anakin face
Count Dooku, at one point Dooku literally lifts up Obi-wan and hurls him across
the room. When Anakin beat him, it was with the more straight on style. Even
better of an example is Mace Windu versus Palpatine. Most of that fight was very
restricted in movement comparitvely, leading to the conclusion that Mace was
perhaps the most qualified Jedi Master to actually take down Palpatine. (Yodas
fighting style is more limited by his size requiring the flying tasmanian
devil style regardless, which could be why he coulnt win against palpatine but
was able to easily beat Dooku who was weaker.) Then of course we come to Young
Obi-wan versus Anakin which was a very athletic duel. Notice that Obi-wan was
fighting a mostly defensive pattern the whole duel untill he was in a position
to goad Anakin into making a foolish mistake. It was after all Anakins
acrobatics that defeated him. So the long winded explanation finally makes its
way to Old Obi-wan versus Darth Vader. They were both using very defensive
styles and we never really see them let loose in all out combat because Obi-wan
sacrificed himself. (Darth Vader didnt really go on a reckless offensive like
he had in his youth presumably remembering what got him in that suit in the
first place.) It is actually kind of odd how well the older movies do mesh with
the newer ones in that regard.
