This may have been discussed previously, but I think that its great that old
sensors and motors will have a cable that will connect them to the new system.

The converter cables have been publicly known for a while.  However, they are
still unavailable for individual purchase from LEGO Education, unlike the
rechargeable battery which is available to purchase separately.

If you want one at once... do it yourself ;o)

I’ll throw one more suggestion on top of that.  Take a standard LEGO cable, cut
it in half, and put a standard adaptor on the end (such as a RJ11).  One LEGO
cable can be used to produce two adaptor cables.  From there you can create all
the custom cables you want using standard adaptors and crimpers.  Then all you
need is a standard coupler to connect your cables.  You can also use standard
swiveling couplers (sometimes called phone detanglers) to create cables that can
spin without getting twisted (which can be important to moving robots).
