You might try a cross connected pair of small pneumatics cylinders.
compression of one will actuate the other and trigger the sensor. The small
cylinders have a decent throw distance, will provide increasing resistance
(to impact) with compression. The big advantage is being able to place the
sensor in a convenient location. You can easily set up the cylinder system
to be its own reset mechanism (the bumper will return to the un-triggered
position)
