Aesthetically they go together very differently. Looking at a wall of grey
with a few off-color bricks will cause your eye to be drawn to the ones that
are different. Just as 3 red bricks in a wall of white would be instantly
noticable.
While there may be times when you are intentionally trying to draw attention
to different colors, there are also times when a solid color wall is desired.
The concern, I think, is that that is now complicated by additional sorting
requirements, and more significantly, by new scarcity issues.
