Todd, I think these are all great ideas. I was actually thinking of suggesting something along the lines of what Eric has suggested in this thread (a photo station). I'm interested. In fact, I had an idea to share. I thought it would be cool to have a "MOC Stop" Folks wishing to have their MOCs photographed could stop by. We do plan to expand on the Brick Bazaar idea. We certainly do not want it to be a focus but buying, selling and trading are popular aspects of the LEGO hobby and therefore have a place and will get some space at BrickFest.
