My thoughts are that the undead don't need to be large numbers since they
can rise again. The demons and such can be risen. All you need is a
necromancer or dark wizard and you can make as many as you need. As for
story purposes you can say as many numbers as you need and use the same figs
in different pics over and over again. The only trouble you'd run into is
if you do a large wide shot with the whole field. Then it would show how
many you actually have. If you're good at photoshop you might be able to
beat that. Dem be my thoughts.
