These are my choices for best castle theme sets out now:
(Guarded Inn - does not really count, It would be very hard to out do most
LegoLand Castle sets before the 1990's)
Best small set: - Knight's catapult 4816 - it has decent peices and two nice
minifigure for a good price.
Best large set: Definitely Bull's Attack - this is the largest siege set
ever, with a very cool battering ram/seige tower combination. It also has a
good selection of peices.
What castle needs - more and better bull minifigures - more castles without
burps - a cool fortress for the bulls - regular peasants - village
structures and vehicles - more minifigures in sets (ie: King Leo's castle
with an attacking army of TWO!) and finally more modular (not modular with
burp!) sets
