I suppose all of that is neither here nor there when it comes to your
work (what do you or other AFOL care about my lesson plans?), but.. you

So nice to hear that, and I actually care quite a lot! I have
used Lego quite a lot myself to teach computer graphics.
Not CAD as such, but 3D modeling, animation and programming.
Swedish M Sc students have often grown up with a large pile of
Lego as their favourite toy, and some of them bring their old
collection to the dorm room (especially after seeing that their
professor does not consider himself too old to play with Lego).
I have seen quite a few animations and even a few interactive
games with Lego themes over the years since I first taught my
introductory computer graphics course in 1998.
One of the latest ones, from last year, is here:

Any way to incorporate a graphical interface into the process would be a (...) (20 years ago, 6-Mar-05, to lugnet.cad.dev, FTX)
