I wasn't clear if you were restricting us to just castles or any set within the
Castle theme.  On the basis of just being a castle, my order would be as
follows:

6080, 6086, 375, 6085, 6074, 6090, 6073, 6081, 6097, 6091

In reality, I judge sets in three categories: look'n'feel, minifigs, pieces
(rare parts etc).  My favorite sets in those categories, across the whole
Castle theme, (off the top of my head) are as follows:

Look'n'Feel:
6067, 375, 6083, 6086, 6077, 6090, 6061, 6049, 6055, 6057

Minifigs:
375, 6086, 377, 6074, 6060, 6071, 6080, 6023, 6081, 6057

Pieces (including consideration for rare pieces):
6080, 6074, 6097, 6067, 6090, 6085, 6086, 6023, 6077, 6066
