Interesting topic.
I previously did "Lego Style", but did not find it as rewarding as I had
hoped. I mixed stock Lego creations with some of my own into a town
setting, with a simple track loop around it. It was nice, but, as I said, I
felt something was missing. I would get bored of my town.
What I came to realize is that I like making buildings. And by pushing
myself a little, I could make them all -- I wouldn't need any stock Lego
structures at all**. That being the case, it seemed natural to move to
completely closed structures.
A tradeoff is that now, my buildings are four-sided but very few have
interior detail! I'll eventually get to that, but for now, "realistic"
building exteriors are enough.
My goal now is to have a layout that would resemble an O-gauge model
railroad layout. The trains are integral to the layout (I have two
independant track loops so I can get two trains running in opposite
directions), and the buildings are intended to look more realistic. I've
been at it since the fall (my Lego time is more limited since the birth of
my daughter) and am not bored yet, and I keep thinking of what to build
next, or how to modify the layout. It's been my most satisfying building
since coming out of my dark ages four years ago.
As you said, it really is a personal choice. When you find the right one
(or the right blend), I think you'll know.

** The odd counter to this is that I have little skill at making autos and
train cars. So I use Lego vehicles, and stock train cars, or borrow ideas
from others to fill in that area. As I get more practiced with it, I hope
to migrate all those items to custom MOCs as well.
