You've got several suggestions by now, but here's a couple more:
* 8251 Sonic Cycle (1999) is one of the best small models I've seen.
It's almost entirely "new Technic" in construction, though (89 pieces,
six of them are bricks).  I have it and the new 8236 Bike Burner, and
although 8236 fits with the "slammer" launcher, I think 8251 is a much
nicer model.
* The three Star Wars droids might be tough, especially if you have no
experience with "new Technic" construction - not a single brick between
the three sets.  I think 8001 Battle Droid is the easiest of the three - or
you could get 8000 Pit Droid and start by building the speeder bike
alternate model.  8002 Destroyer Droid is demanding but worth it, the
intricacy of detail and motion in the finished creation is really astounding.
(Although I still haven't got mine to pop open as advertised!)
* If you can find an old universal set, by all means go for it.  My first
Technic set was 8020, the first small universal.  (Actually, my _first_ copy
of 8020 still said "Expert Builder" on it - it was later replaced.)
* Among bigger non-Star Wars sets, I have 8444 Air Enforcer and 8445
Indy Storm and admire them both.  I think 8445 would actually be easier;
even now most of the car chassis include substantial bricky parts on which
all the "new Technic" arms and pins are hung.  But 8445 may be difficult
to get now in the US; Lego forgot to pay for the word "Indy" and the set
is no longer available from S@H.  The store nearest me still has a few.

I've never built a Technic set. I've never owned a Technic set. I *do* own a bag of misc. Technic parts, but I couldn't tell you what they are or what they're used for--round thingys, pokey doohickeys, stick hootises, bent thingamabobs, etc. With (...) (25 years ago, 22-Feb-00, to lugnet.technic)
