I agree that I'm asking a lot out of a humble thermistor.
I have used the NS LM50CIM3 for years now.  This is a cheap SOT23 SMD
chip and therefore nicely small too. Come in larger TO92 package too
(LM50BIZ or CIZ)

It needs GND and +ve (4.5v to 10v) and outputs a  DC from 100mv to
1.75v (giving -40 to +125 deg C).

Beauty of this chip is it has an internal voltage regulator, and
therefore once calibrated, maintains +- .5 deg C accuracy.
