Well, it isn't pretty.....
Okay, it's down-right ugly....
But I hope you'll agree that has more to do with the riot of colours rather than
the actual design.
I've built a posable horse. It's slightly larger than the standard Lego horse,
but it is still appropriate for minifigs.

It has 11 pivot points (not including the minifig in the pictures), as compared
to just one on the standard horse.
The variety of colours is the result of my parts selection and (in)ability to
find things. They also serve to make it clear just which kinds of parts are used
and where.
It all started when someone posted pictures of their "direwolves". That was soon
followed by pictures of an apparently new Lego transparent "ghost horse", and
then at least one or more posts of MOC horses. (I can't remember the authors of
these posts -- they know who they are).
All that got me thinking. Hmmm (I thought) hmmm. Is a posable minifig scale
horse possible?
I spent a lot of time thinking this through. Originally I was on the trail of
using the new locking hinge parts. Lots of searching on Bricklink. Lots of
thinking. Recently I abandoned that line as I realized that the colour selection
was just too limited for locking hinge parts.
Over the past couple of days I finally dug into my collection to see what I
could do with what I've got. One other stipulation was that it had to accomodate
the standard saddle. The hardest part was developing the neck and head. I went
through at least three variations before settling on the one pictured. In time I
may edit it further. You may have other ideas that would work as well or better.
Here's the parts list of the horse pictured. As much as possible (depending on
availability) all parts except the saddle should be the same colour. Planned
variations are fine, and some parts may not yet be available in some colours
(notably brown or tan) so you'd need to substitute as appropriate. In general
then, you should be able to create a black, white, tan, brown, or lt/dk gray
horse with the following (in no particular order):
(1) standard saddle -- any colour
(6) 1x3 plates
(3) 1x2 plates
(1) 1x2 plate modified with side bar
(1) 1x2 tile
(3) 1x2 tile modified with centre stud
(1) 1x1 tile modified with top clip
(1) 2x3 plate
(1) 2x4 plate
(2) 1x1 plate modified with vertical clip
(1) 1x2 plate hinge with 3 side fingers
(1) 1x2 plate hinge with 2 end fingers
(2) 1x1 plates round (square also works)
(1) 1x1 brick
(1) 2x2 brick
(2) 1x1 bricks modified with 1 side stud
(1) 1x2 brick hinge top & bottom (a 2x2 top also works)
(1) 1x2 slope 45
(1) 1x3 slope 33
(1) 1x2 slope inverted 45
32 pieces in total.
That's about it for the horse.
