I have chased this topic around quite a bit in the last couple of years and built a few prototype devices to perform "I/O expansion". I've been working on just such a robot. (two RCXs, two rotation sensors, four light sensors, and two touch sensors) Currently, my biggest problem has been communicating between RCXs. During development, it was discovered that the BlueTooth chip apparently has about a 60ms latency when changing directions.
