As a sensor, you could have the laser go into a large piece of quartz or some other rock. When these rocks are hit they make the whole rock glow very brightly, enough that a sensor could detect. There is even a much simpler way that works regardless of what type of camera you have. Take a look at VideoServer on an easy to use solution to this.
