What NALUG did, and has worked fairly well for us, is we just hardmounted an
oval of track to a 4x8 sheet of (pressboard? some varient of
wood-but-not-wood). We tell show organizers that they'll need to provide a
4x8 table per oval they want. Then we duct tape the sheet to the table, and
walk away. At end of day, there is a certain amount of collecting bricks
from the floor, but it's not very time-consuming, and (at least at the last
show) parents and kids do most of it for us.
YMMV, but we get along OK without gutters.
