Yes, there are ways to do just about everything you asked.

I don't think the RC motors will run at full power when connected to
an NXT (which can be done via conversion cables)

Personally, I'd suggest gearing up one or more NXT motors, and using that.

Although gearing up the NXT motors may result in a loss of torque, it sounds
like a good option.  Another option might be to control the switch for the RC
motor with one of the NXT motors (which would be controlled by either a
revolution sensor or an ultrasonic sensor). That way if there is a jamb between
the chop block and the blade assembly the NXT system could stop the blade.

2 Questions:  Is there a revolution sensor that can interface with the NXT
system (someone at Brickfest told me that the older mindstorms kits had a
revolution sensor).  Can the ultrasonic or light sensors do the same thing as
the revolution sensor?

Hi Nathan, (...) the RCX rotation sensor should work on sensor ports like all legacy sensors, provided it is supported by the firmware. It would also be possible to build a rotation sensor for the motor ports, i.e. like a NXT motor without the motor (...) (18 years ago, 27-Jan-07, to lugnet.technic)
