The AT-AT drivers we see in ESB are in gray and white - but, one can also see
that the stormtroopers designed for a snowy environment loko different from
stormtroopers on the Death Star and elsewhere.  Can't the drivers be
differently
garbed as well?  Since we don't see any of the drivers on Endor, I'm
comfortable
saying that in non-artic climates, the drivers are wearing black suits rather
than white and gray.

That sounds like a very good rationalization. :^)

What if you combined the white Stormtrooper helmet with another torso?

I'm having trouble thinking of a good torso to use at the moment, but it's a
thought. :^)
