Hi Jonathon,
  It is possible to build a differential using the NXT parts.  It is a bit big,
but I have seen it done.

  I've not used this to make a car, but in general, I don't find three or more
wheels interesting.

  Go for it.  It is quite possible to make a nice car.

  With three motors, you could use one for steering, and two for drive, doing
the difference between motors in software.

  I cannot speak to alternative programming environments for OSX.  Sorry.
