Do LEGO sets enjoy this protection?

No - therefore several zip-lock bags separating out large and small pieces
would be my suggestion.

New parts rattling loose in a box is to be avoided, I have to agree.

I was aware of this potential problem. The bits I have are already in
ziplock bags ready to go. If each person takes reasonable care to ensure
they can't rattle about too much, all should be fine.
