G'day,
Well, I can't speak for Sydney, but down here in Melbourne there's several
second-hand toy shops. [and yes, I am the reason that at least one of the
stores rarely has lego on the shelves :) ]
Should you wish, I'm sure there's quite a few people here who would be
willing to assist you to find old sets/parts that you may require to help
with building...
