I don't think each person has to constantly guard their own models, as
long as some responsible AFOL is on hand to keep an eye out for all
the models in a particular area. For example, at BricksWest we had
several clusters of tables scattered around, with chairs and open
space in the center, and people took turns occupying that center
space, answer questions, and keeping an eye on the MOC's. There were
also guard ropes to keep people back; though there were some problems
with them, they worked pretty well.
