1. Here's a list of B&B's on the zwolle tourist information site:

2. There's no difference. In holland you can only make reservations for
international trains, so there's no need for advance fares. There are no
open returns either. There is a weekend return that's valid between 7pm on a
friday and 4am on the following monday. If that's no good to you you'll have
to buy two one-way tickets. There's a counter at Schiphol Plaza, and there
are ticket machines that take bank cards and credit cards (Visa/Master
anyway).
