I'll echo Leo: research. Look through Brickshelf for castles, check out the
links on the castle sidebar - Robert Carney's site is particularly inspiring
(and intimidating!) as a guide to modeling real castles with Lego; Sava's Ikros
stuff really showcases some excellent fantasy building as well as good detail
work. I'm sure I'm missing a bunch.
Check out your local library - in my experience librarians are always willing to
help narrow down your search to get to a few really useful books.
