Hi Jeff,
The only thing I can say is, look at pictures of some (real) English or French
castles. Read a book about their construction. A very good book is Sidney Toys
"Castles, their construction and history".
Think of a castle as a strong building with thick walls and not a kind of
palace.
But the most of all, Try, try, and try again.
You can also look at some nice examples on Brickshelf or something.
