All the documentation I've ever seen indicates the TIE Interceptor has four
laser cannons.

Does anyone have any official information indicating more than four?

I'm with you for the four cannons, too. All of the references to TIE
interceptor (X-wing novels, EGtTVV, SW Technical Journal, Behind The
Magic CD, all the SW games) says it has four cannons. Although many fans
consider games as not "canon" references, I value them as much as other
official references since they turn some part of the SW universe into
your own experience. And what can be more canon than your own
experience? "Hey, I used them and I know they have only four laser
cannons!.." :-)

By the way, in the same reference, they said:

"Schematics and sketch for a destroyer of the ISD-II sub-class, from
Essential Guide to Vehicles & Vessels. Note: this diagram's labeling of
some ship features is sometimes technically dubious (e.g.. scanner
globes wrongly attributed deflector functions)."

I always think that globes are deflector shield projectors (again mostly
based on "my own" experience..:-). Is above claim true? I clearly
remember that in ROTJ, just after an A-wing(?) destroyed one of the
globes, an officer at the bridge of SSD Executor, said to his commander
"we lost bridge deflector shields".
